Okay, the ubershed is being built this week, a mighty 4 metres by 2.5 metres beast of a man cave. As such I've already got planned the brewfridge (Thanks Dad!) and the relevant block and tackle etc etc for AG, but until term ends and I can finally put some time into the final touches of the AG setup, I need a project as I'm down to my last 15 bottles of beer...

So, heres a couple of recipes I've come up with...

http://www.brewersfriend.com/homebrew/recipe/view/367124/autumn-saison
http://www.brewersfriend.com/homebrew/recipe/view/376800/schwartz-type-bier

Just to get some drinkable beer in and to have a laugh cos lets face it, as a chemist, I'm interested in the process and the final result...

Any feedback on the recipes? Specifically the possibility to add some more maltyness into the first recipe without screwing the colour over too much...

Thanks Peeps

Yeah saison is all about the yeast. Malt character is generally quite subtle and a dry finish is desired, there shouldn't really be any sweetness.

Tragedy! Down to your last two days supply!:lol:

The recipes sit within the Brewersfriend style criteria so they should both go to plan.

I've used the Brewersfriend system twice and they were both spot-on with everything predicted. However, the Mild Ale took three months of conditioning to come good so don't expect to get it right first time round! :thumb:

PS

Live and Learn: Just realised that I keep mixing up "saison" and "session" when it comes to beer styles!

Ah well, the joys of old age are legendary!

Thanks for the feedback guys. I'm not much of a stick to the style kinda guy, in life I pretty much live by the seat of my pants, but with these I want to stick to a generalised style as I've done a fair few brews and just want to try these 2 types out... When your beer buying ability is limited to Sainsburys unless you're gonna drive 12 miles to the nearest specialist shop, it kinda pays to be a homebrewer...

Time to order the stuff in and give it a shot!

Dutto, that mistake you made is the precise reason I'm down to my last few bottles... I was reading about Saisons, whilst having a session on Friday night last week. I put a serious dent in my stock...

The yeast is getting down to the season! Almost there to experience some adventure but couldn't hold on to this.

I'm down to the last 6 bottles of 10 gallons of Biere de Garde (French saison) that I recently brewed. 5 gals were to the Greg Hughes recipe, the other 5 had different speciality malts plus some smoked malt as well. Both have been really nice with a strong banana-ey aftertaste from the wyeast french saison yeast. Though now I'm looking forward to some brews with a more sensible ABV - they were both 6.5%. Deffinitely worth doing though.

There's no point me brewing anything over 5.5 as I don't find them as pleasant to drink. I tend to aim for about 4.5 to 4.9 and let the carbing sugar take em to 5 ish...

Gotta love the efficiency of THBC. I ordered Monday night, shipped Tuesday AM. With the 5% discount it almost covers the shipping costs... That's service I like!

Try adding something in season to the saison!

Maybe steep some rhubarb (it's past its best for eating now) or raspberries to add. Another good step would be to add some citric hops or nettle tops.

I'll pass on the hippy additions fella. Nettles are for slapping chavs with and rhubarb is only good in a crumble with Custard imo.

I might give the raspberries a go though, that sounds like it'd give a nice twang. I'd add that to the to be brewed list...

Hippy additions? You have to scrub them down first!

Nettles add a hop-like astringency; cheaper than hops too!
