Hi Folks,

I have a 30bt Soave kit which will require 3 or 4kg or sugar to get to 12% at full volume.
I've seen that lots of folk brew 23L kits to about 20L to add extra body, but has anyone got any experience with just using the contents of the can and adding water up to 10 or 15L, which ever get OG up to a good starting level and hopefully end up at 13-14%?

As the kit only cost me a pound in a wilko's clearance, I'm not bothered about the cost, merely space and the fermenter being tied up.

You can certainly bump up the alcohol by using less water. 10% less water will raise it by 1%, bringing it up to about 12% abv., which is fine, but as you increase the purely sugar fermented alcohol proportion, the flavour is degraded and the chances of a hangover increase. You are entering them realm of so-called 'mafia' wine.
