I've made a dopplebock before and used s-23. I fermented at 18°C for a couple of weeks or so. Generally for lagers I use s-23 and w-34/70 and they ferment well at 18-20

As above, S33 or W34/70 would be perfect. Personally I would ferment around 10° but a bit higher won't make much difference.

S33 or W34 / 70 which would make the beer more malty ? I would like to try the fast lager, have you tried?

I always use Mangrove Jack's lager yeasts, mostly M84 Bohemian Lager for bock. However, I only brew bock once, around December/January, so that I can ferment at lager temperatures. I ferment for one week, then rack into a secondary vessel, one week around 16° C, and then I put it in my garage for a couple of weeks in the winter so that it becomes clear. Then I bottle with a little bit of bottle yeast.
