I decided to use water in my first elder and black wine, I found this recipe on the web.

Being inpatient I have defrosted my 21lb of fruit tonight with boling water and should
be following this recipe. PS. I have recently made a gallon of aldi fruit juice cider fermented with brambles.
The result was similar to dark fruit cider which you buy. Very nice.

ââ¬ÅElder and blackââ¬Â elderberry wine recipe
To make one gallon (4.5 litres)
1kg (2.2lb) elderberries
1kg (2.2 lb) blackberries
4.5L (8 pints) water
1.5kg (3.3lb) sugar
1tsp yeast nutrient
Juice of one lemon
1tsp pectolase
1 sachet red wine yeast (NB one sachet is enough for up to 5 gallons)
