Wanted to make a elderflower cordial, got a few suggestions from the approx 20 recipes i found online but decided on the following, made this last week. }

50 fresh elderflower heads
6 pints hot water
one sliced lemon
i bag (1kg) granulated sugar
50 grams citric acid

i only added the lemon cos the better half likes lemon, and the quantity of citric varied in the recipes i saw, i added what was in the container that i bought.i gather the citric acid improves shelf life. Added to bucket and left for 4 days, shaking every so often then drained through muslin into bottles you can freeze into ice cubes to store if req'd.

taste test when added to 50% water
All said taste was excellent, i suppose you could reduce from 6 pints of water to strenghten cordial. citric acid quantity is still is mystery.
