I've been fortunate enough, along with many other on this forum, to have sampled a bottle or two of Wez's Big Kenny over the last year and I thought it would be a great idea to run a forum brew where we get Wez to post his latest recipe for the brew and we all give it a go.

Given its now the beginning of October it is possible to get a brew on and have it ready and distributed to your chosen friends in time for a festive forum tasting session and appraisal - possibly through the chat room (unless the PO go on strike). So, lets see hands for anyone interested in giving it a go and we can all arrange a common tasting session this Christmas.

I have passed this idea past Wez and in true Barack Obama style he said he was "Surprised and deeply humbled". What a statesman!

I like the idea, i'll dig out the best recipe :thumb:

I like the sound of that, I'll leave that up to Dunfie :thumb:

The Big Kenny recipe that I usually go with is :

Target OG 1.050
Target IBU 38
Mash 90 mins 68c
Boil 90 mins

Pale Malt 97%
Crystal Malt (dark) 1.5%
Roasted Barley 1%
Chocolate Malt 0.5%

Challenger 90 mins to 33IBU
Fuggles 15 mins to 5IBU
Bobek 1g per L Final Volume added at 80c and steeped for 15 mins

I have also replaced 5% of the Pale with Torrified Wheat or Wheat Malt

I usually ferment with S-04

Would love too but the brewery is out of action at the mo :(

:( mine is going to have to wait until the thermobox is turned into a tun

Going to check APost on Monday for cost to send a bottle to the UK. Would like to make that recipe, and fiddle with the hops.

Cheers,

Screwy

As the secret to Kenny is in the Grain bill and the IBU - why not throw the hopping open. to see how diverse Big Kenny could be

Seems like a fair idea. We can throw the hop varieties and schedule open to the practitioner. :thumb:

In that case Yeast S-04 as per Wez's recipe?

Yes, S-04. Lets keep the yeast consistent. This could be a very interesting experiment - going to do mine in a couple of weeks.

Cracking so

the constants are :

The grain bill
The OG
The IBU
The yeast

the variables are:

hop schedule
mash temp?

Is that the summary?

Sorry Wez, I just feel that you are going to set about me with a screwtop when you talk like that.

Yes, lets lock that in. :thumb:

FOr those who forget these sorts of things this is the recipe for the third forum brew

OG 1.050 , IBU 38 Mash 90 mins 68c Boil 90 mins

Pale Malt 97%
Crystal Malt (dark) 1.5%
Roasted Barley 1%
Chocolate Malt 0.5%

Up to 5% of the Pale can be replaced with Torrified Wheat or Wheat Malt

Hopping is up to the individual, but Wez normally goes with

Challenger 90 mins to 33IBU
Fuggles 15 mins to 5IBU
Bobek 1g per L Final Volume added at 80c and steeped for 15 mins

Yeast is S-04
