I normally make country wines but am going to have a go at making grape wines from concentrate. I've been looking at kits as a way to get started. I really only want to brew 6 bottles (1 gallon) at a time - I don't need or want 30 bottles of the same wine. What I'd like to do is buy one of the 30 bottle kits, use some of the concentrate to make grape wine and the rest to bolster my country wines. So, what I'd like to know is how long the grape concentrate lasts once opened. Any ideas? I'd also like to know whether I should spend extra on a specialist yeast or just use the one that comes with the kit? Many thanks.
 
I know the 100% red grape juice we use to make wine has to be used 4 days after opening I imagine it'll be the same for the kit juice.
