Help with 2 AG x-mas milk stouts

Hi all
I’m wanting to make my first AG stout. I’m planning on doing a split batch, one a chocolate, coconut and raspberry milk and the other a chocolate and coffee milk. I’m wanting a good solid base so thinking of doing the milk stout recipe from the GH book. Iv got 1kg lactose, some dried flaked coconut to toast, a bag of frozen raspberries and some ground coffee. Iv ordered 100g of cocoa nibs as I read that the fat in cocoa powder stops head retention.
So the plan is to get two 11lt batches.

Batch #1
I’m honestly wanting to emulate the taste of “ruffle bars” Twas my favourite bar at school ,, dark chocolate, raspberry and coconut 🤤

Batch #2
A deep rich dark chocolate coffee 🤤(maybe with a touch of orange, or am I getting way carried away)

Any of you knowledgeable made anything similar and maybe help me out with the amounts Iv to be using when adding my late additions and secondary’s
