I'm going to knock out a weissbier tomorrow. I have tried a ferulic acid rest in the past, but realise I've always added acid or acid malt at the start with the rest of the grain. Apparently that rest is actually best with a slightly higher pH.
So to give it a good try, I was wondering about adding my acid malt just after the rest has finished. But I wondered how to do this in practice?
I'm on a grainfather- do I just wait fir the end of the rest, stop everything, take the top off and stir in the new malt? Will that work?
