Right, haven't been on or done anything for 6 months, and stocks are low, so time to get some booze for what passes as a summer in Scotland.

1kg sugar dissolved on 2.5ltr water
Juice and peel of 10 largish lemons.
Pecto, nutrient, & yeast.
Topped up to 4.5ltr with water

I used a tattie peeler to get the peel rather than a grater, much, much quicker.

SG 1.06, looking for ABV of about 8%.

Once 1st fermentation is done I intent to taste for strength and potentially dillute with water if the taste is too strong, which should bring down the alcohol content.
