We made this as a trial and it turned out fantastic!! Really sweet syrupy gorgeous flavour too and its so easy to make.

1lb of morello cherries (frozen packs from ASDA)
1.1/2 litres of cheap London Gin (lidl)
500g of granulated sugar
1 fresh vanilla pod cut down the middle

In a demijohn pop you cherries, sugar and vanilla pod in and give it a good shake then leave for 24hrs.
After 24 hours add the gin and shake vigorously. Shake everyday until all the sugar dissolves, once all the sugar has dissolved leave in a dark place for 4 months. When it has finished strain all the cherries out and give them a good squeeze to get all the juice you can! You are done.

Best of all the cherries can be popped in the freezer and used in deserts or as a cheeky alcoholic treat.
 
No problem at all, enjoy it I certainly do hahaha, It was supposed to be for Christmas however I don't think it will last that long. I have a stack more recipes like this, when I get a chance I will post them up.
