Hi. I've been brewing beer and country wines for years now but on a small scale. I've assisted with all grain brews but don't have the space for all the gear at home so stick to beer kits. Great to see others have exactly the same issues that I have come across with lots of helpful suggestions but it would be great if more of the questioners followed up with 'I did this and it worked or I tried this and it didn't'. I'll try and remember that with my posts.
