Hi Folks
Have just brewed my first batch of home wine. Youngs definitive peach and it has turned out very nice. My question is this. I have on the go now a 1 gall batch of Calfornia connosier zinfandel blush. The instructions say after the original ferment has finished at about 8 days, syphon into a clean vessel and put into a warm place for approx a further 12 days. I did this at day 8 and three days after I can see no further fermentation and indeed the wine is now starting to clear on its own. Should I go to the next step and add the stabiliser and finings or should I wait the full 12 days?
 
it may be the wine has finished. check the gravity if it is in the .990-.996 range it may be finished best to ceck your instructios to see what they say it should finish at
 
Welcome to the Forum ZD.
Don't worry, you have up to 6 weeks before you rack off from the sediment.
If the wine is clearing then let it do it's own thing, but it must be kept under a fermentation trap.
If not clear by 6 weeks then rack off and add your finings.
Add stabiliser when fully clear and bottle.
