right so your pilsner is fermenting at 10 degrees when do you start raising temp for a diectyl rest i aim to raise the temp up to 14-15 degrees but when?

I go 3 weeks at 50f and then slowly raise the temp 1f per day till I'm at 62f and let it sit for 5 days, then I drop it to 34f for 2-3 weeks. That's if I'm using a standard lager yeast.

If you want to cheat you can use a California lager yeast for3- 4 weeks at 60- 65f and then drop the temp to 34f for 2 weeks and serve.

What kind of yeast did you pitch? I did a Pilsner on Saturday (with 34-70) and seemed to begin fermenting quite quickly (blubbing away about 5 hours later). I did pitch at room temps then moved the FV to the garage about an hour later.
