Supermarket Juice Wine how to guide plus Recipes.

Its generally agreed Orange Wine isn't very nice and few make it a second time the good news is the method used in the videos below is the same for all supermarket juice so if you are not keen on the sound of orange wine read on -



Some members are finding their supermarkets are not stocking White grape juice but have Red grape juice, Red grape juice goes well with apple, cranberry, pomegranate or raspberry juice,
Red grape juice does not make red wine it ends up like a shop bought Rosé wine .

In the video below he makes orange wine and uses 1 litre of orange juice and 1 litre of white grape juice you can switch this for any other juice and also use red grape juice if you cannot find white grape juice.

Some supermarket juices (Pomegranate, cranberry etc) are less than 50% juice so you need to add two of these to one of 100% grape juice per Demijohn (DJ).

The two videos below show you the ingredients and the method.

Don't take too much notice of the time quoted for clearing as he intended to let it clear naturally if you use wine finings (KwiK Clear or Youngs Clear It) it only takes 48 hours.

To give it a little extra flavour we now use 1.5 litres of apple juice to 1 litre of Red Grape Juice and reduce the sugar by 50g to keep the ABV% the same as in the original.


Part 1 -






A couple of minor mistakes in the Video -

Pectolase is used to reduce the risk of pectin haze.

Glycerine is added to improve mouth feel. (many member no longer use this as we found it doesn't actually make that much difference)

Leave more headspace in the Demijohn than in the video or it will come through the airlock (as it does in the video) and don't top up until until you have racked (syphoned) to the second DJ and degassed your wine, you need a bit of space when shaking the DJ to get rid of the CO2 and especially if using a drill attachment to degas it.

When racking to the second DJ he says it doesn't matter if a little sediment gets through as you will probably be re-racking again, there is no need to rack to a third DJ as your wine will be crystal clear after you have added finings (KwiK Clear or Youngs Clear It) to the second DJ.

Part 2 -








Rosé wine

1 litre Red grape juice.

1.5 litre Apple Juice.

750g Sugar.

1 tsp Tannin or a mug of very strong black tea. (3 bags stirred every couple of minutes as you put the rest of the ingredients together)

1 tsp Yeast (i use youngs super wine yeast compound)

1 tsp Yeast Nutrient.

1 tsp Pectolase.

1 tsp Glycerine. (optional)

1 tsp citric acid or juice of one lemon. (optional)

@Nidger - This is a forum favourite we made many gallons of the stuff and never tired of it.

That's the grape juice i have and i have the lidl pure apple juice.
Unfortunately I had to run my eldest daughter to hospital for an x-ray on a suspect ankle.
It's just sprained.

That's the one I was thinking of so i will give it a go when i get chance.

It was more a consensus of the wine produced,

It says in the recipe Glycerine and Citric Acid (optional) i left that in the original post because it was the way we all made it back in 2013, you really don't need either we didn't notice much difference if any and you could always try it as an experiment later when you have made a few to compare it to.

My in-laws asked for another batch :). I really like it, it gets better after couple of weeks in bottle. I have just finished one I made in august and it was even better - it is an early drinker but couple of weeks make difference. I would compare it to a nice table rose when chilled. As mentioned have been asked for more from family so all is good.
 
Not wanting to read through 149 pages, (no offence,) can anyone point me at any recipe or advice for making pure apple juice wine?

Wine made without using grape juice, just apple juice, as grape juice is like rocking horse urine around here.

Apple juice, sugar, yeast. I make the total sugar up to 1100g per 4.5 litre demijohn. But I would call it cider.
 
Cheers butty. But is it still cider even if it makes, say, 16% ABV?
 
I make pure apple juice wine all the time.
Always tastes like a good mid priced white wine and not at all like any cider i have ever tasted.
Even my sparkling apple wines taste similar to real champagne.

Why,??????
Might be the juice.? Or the yeast (ecc-1118)???
Truth is i am not certain.
 
I find the same with all my country wines made from various berry's. they all taste similar to red/white grape wines.
Yes i use clear apple juice normally from the co-op.

Also i don't add any water except for the small amount used to make up the sugar syrup.
So 5ltrs of wine is about 4ltrs+ pure apple juice

Thanks. I've only used Tesco stuff which was cloudy. Currently drinking tart cherry wine which is rather unusual but enjoyable. I'll try some Co-Op stuff soon.
 
morrisons do a clear apple juice that's just 55p a litre and it tastes darn fine when converted to wine.
think my favourite i've made is pineapple/purple grape/apple. a litre of each then made up to 1100g. tempted by pomegranate.
 
My pomegranate wine has stalled at 1.010. I wonder if pomegranate contains unfermentables. It tastes great but is too sweet.

I made quite a few gallons of pomegranate wine and non stalled but that was a while back they may have added something to it now.
 
If anyone wants to experiment this makes a good wine with white grape juice or red grape juice - https://www.tesco.com/groceries/en-GB/products/304380055

Its only 27% juice but it is strong so the taste comes through.

Ingredients
Water, Cranberry Juice from Concentrate (24%), Sugar, Cranberry Puree (3%), Thickener (Pectin), Vitamin C, Sweetener (Steviol Glycosides, a Sweetener from Natural Stevia Leaves), Natural Flavouring

Tesco make a pomegranate smoothie 750ml, which is quite nice if you do 2 bottles of that and a litre of apple juice per gallon. Then add sugar of course.

They also do a passion fruit and mango one 750ml which is nice too with 2 bottles of it and an apple juice.

I only got 5 and half bottles out of each of them though in the end because there was a lot of sediment and **** on top while it was fermenting. Cracking drinks though.
 
Call me boring, but I've gone back to basics. No more "guava, star fruit and lychee" wine for me, too many disasters. Pure, ordinary, wines from apples and oranges, (maybe grapefruit.)

Risking it I know, but is there any white grape juice going anywhere?

Hi, I used 250ml concentrated white GJ from LHBS and 1.5ltr AJ and all the other usual ingredients(5ltr batch)..It made a very nice white.
