Well, my large, stainless steel thermometer finally came in. Now, which pot to add it to!!! For mashing I use my STC to control the heating element. But if I add it to that, I can see two views of my grain temp.
But, if I add it to my HLT, I can see the temp for my sparge water.
Any advice?

You heat the mash? so biab? if so the internal aspect may interfere with the grain? a nice insulating jacket for the mash aspect of the brew might be better helping retain heat needing less uneven input from the base up??

But perhaps the easiest solution if its too hard to decide is get another and fit to both pots ;)

That's what I thought.
As for heat, I do lots of step mashing. Also using wheat and oats you need to protein rest them at 50 degrees first. Then ramp it up.
I used to BIAB but just do straight. My mash tun has a false bottom but I also recirculate mash. It makes the wort super clear. However, it lowers the temp fast due to all the tubing and pump. Do the heating element maintains the heat.
