I have my brew fridge up and running and was about to brew (on sunday) a Bavarian hells lager but realised my fridge will be used with this for 8 to 10 weeks so i've decided to brew a wheat beer (again) but this time i'll be cooling the wort to 15c before pitching yeast and also dropping the ferment temp to 10c for 7 to 10 days after final gravity reached . Fermentation temp will be 18c using my fav yeast wlp380 mash steps with no decoction for an easy brew day .

1.15 kg Pilsner (Weyermann) (3.3 EBC) Grain 2 24.0 %
0.29 kg Carawheat (Weyermann) (110.0 EBC) Grain 3 6.0 %

10.00 g Perle [10.00 %] - Boil 70.0 min Hop 5 9.8 IBUs

So planning this for sunday , getting my starter sorted 1ltr plus stir plate .
 
Hi can I ask you a question? Got my first wheat in the FV. I'm using WY 3068 which looks to be equivalent to WL 300. The coolest spot I can put it is 22 C so the wort is presumably hotter. Is this going to ruin my brew? Thanks T
 
I often brew mine at 22c (max) but that's inside fv , yeast add around 2 c so yours may be 24c which is on the danger side but maybe ok.
 
Thanks again, not yet got a brew fridge, I will sit it in a water bath with some ice! Smells great already. Can't wait to bottle it! T
 
22-24°C should be fine for a wheat if you fermented only at 24°C wort temp you will get full on banana.
