I pitched rehydrated M31 yeast into a saison (OG 1.036, because this yeast goes deep), and there was already a nice kraüsen less than 12 hours later. I also underpitched a little. Will see what the result is, the saison is also well hopped.

I've found it does taste hot when young and theat was both at 26 and 24. However if you leave it 6 months its really comes together I compared a 6 month to an 18 month triple and the 18 month was better again.

Follow-up on my saison. With an SG of 1.035 and a FG of 1.004, this beer has indeed become the saison beer that I wanted. It seems to me that the M31 is drier than the M41, but I haven't used the M41 in something saison like, only in a Duvel like.

The attenuation is not so deep as the M29, but it provides a nice alternative. Need to see how this ages, it is only two weeks in the bottle, and a saison needs a bit of conditioning time.
