Hi I have a wine kit on the go. Its magners 30 bottle red. It says to leave it fermenting for 7 days but today on day 5 its down to 1.000 and tastes good. It is just as dry/sweet as I want it to be. Now can I stop fermentation 2 days early to keep this taste or should I let it carry on until the 7th day and sweeten it before bottling?

If I am sweetening it how much sugar do I put in 23litres?
 
In my opinion it would be a mistake to try to stop it now because the yeasties still have work to do, give it at least another week before you think about racking. If you post another gravity reading then, either myself or someone else will be able to work out the sugar to add.

Disregard any kit instructions about number of days, they usually range from over-optimistic to absolute cobblers.
