This is one ive done recently and is very nice, will deffo do a bigger batch next time. Did 2 Gals this time in 5 litre PETS.

Recipe:

1 litre White Grape Juice
1 litre Welchs Purple Grape Juice
1 litre Orange juice
1/2 tsp Tannin
2 tsp Yeast nutrient
Sugar to required SG (i went for 1.095)
Champagne Yeast
1 tsp Glycerine
1 tsp Pectolase

Water to usual 4.5 litres after initial frenzy

When SG gets to 0.995 - 1.000 (approx.) added half a tin of Lychees (including syrup), basically emptied tin of lychees into a jug, used hand liquidiser to mash it all up, added 1/2 tsp pectolase, left it for 12 hours or so, covered.

Then added (half) to brew, remember i did 2 gals, so split the lychee evenly.

Ferment until complete, strain, rack, filter, bottle.

The wine really has retained the flavour from the lychees but its not over powering. I think the key here is the addition of the fruit after the main ferment has calmed down.

It also has a lovely colour from the PGJ, a nice deep rose.

Not sure wether or not the PGJ added to the flavour or not as i havent tried it with all white grape juice.

Would deffo recommend.

im currently stuck on pineapple WOW..its amazing.

ill defo give this one a whirl.

has anyone tried adding oak chippings to the brew to add age?
