I've seen youtube videos about wow and one thing seems to be apparent. Wow seems to create a big frothy head during the early stages of fermentation and tends to 'flood out' of the airlock.

I had a thought but I don't know if it's a good idea. If I add all of the ingredients but only half the juice and let it froth up for the first couple of days and then add the other half of the juice, will this effect anything?
 
Maricel fill the DJ to the beginning of the shoulder, let it ferment until its finished then rack it to a sterile DJ to degas and clear, you need head-space to degas so leave topping up until everything else has been done.
