what's the best way to obtain a sample of yeast, to grow into a starter that I can keep for a long period of time, and start several batches with, without buying a sachet of yeast?

ie - if I buy a bottle of beer/cider/wine, how do I obtain a cultivar from the yeast in that bottle? and what do I have to buy? (obviously it needs to still be 'live', so in a brown bottle)

is it also possible to do it from a DJ that I'm about to rack, and bottle? there's a thin layer at the bottom
and does the stuff freeze?

any ideas?
