Planning my first brew for nearly a year tomorrow and the plan is to repeat my last brew.

Brew Length - 19l
60 minute boil - 75 minute mash
3.6kg maris otter
15g nugget @ 60 minutes
25g galaxy @ 15 minutes
15g challenger @ 15 minutes
25g galaxy @ 5 minutes
25g galaxy @ 0 minutes - steeped for 30 minutes
25g galaxy - dry hopped after 7 days
US-05 yeast

This came out very tasty last time, I have some old crystal malt which I'm wondering if I should put in, and I also have 100g citra. I'm tempted to drop the nugget altogether and match the galaxy additions with citra to get a good old hop monster, potentially with some 10 minute additions, however I'm undecided, and might just save my citra for the next brew.

What do you all think?
 
Hop wise, whatever you like if you ask me. Galaxy and Citra both make great single hop beers, or work well with other hops.

Malt wise, I wouldn't put anything older than 6 months in. Don't feel like you have to make the malt bill interesting, some of the best beers are single, low hopping and pale malt...
