Well seen as thought the temp has dropped and I've has a vial of WLP810 in the fridge since May I reckon it's time to get a steam beer on!

Starting the 'starter' :D today with 500mls and will step up to 1L. then 2L for a and probably get it brewed next weekend!

So far I've come up with this recipe

UK Munich Malt 0.238 kg 5.3 % 0.5 In Mash/Steeped
UK Wheat Malt 0.101 kg 2.2 % 0.1 In Mash/Steeped


Hops

German Northern Brewer 8.0 % 30 g 28.8 Loose Whole Hops All Of Boil
German Northern Brewer 8.0 % 15 g 6.7 Loose Whole Hops 15 Min From End

White Labs WLP810-San Francisco Lager


Anyone fancy picking it apart?

I'm going to go with a general water treatment of 1/2 teaspoon of gypsum in the mash and boil along with 1/2 tsp each of epsom salts and calcium chloride. I want it to be both malty and hoppy! :D
 
I've just got some of the California Lager yeast from the maltmiller thinking along the same lines as you in terms of current temperatures.

First thought is that it seems quite high on crystal to me. Also anchor steam is fairly pale. Is this intended to be a clone? I've been looking at recipes for that and they seem to be mainly pale malt and a bit of crystal.

The BYO magazine website has a few recipes for California Common

4.1kg us 2 row pale
400g crystal
14g northern brewer 45 mins
14g northern brewer 1 min
ferment with wyeast 2112 california lager yeast

This is the colour of a beer I made using 500g of dark crystal......................hmmmm maybee a touch too dark!

Yep your right TM, I'm gonna half the amount of dark crystal!

although that recipe comes up a little light in colour in beeralchemy. Should still be a cracking beer though. Have you made it before?

I'll probably ferment at about 16oC as thats the current average temp of my spare room! :D If I pull my finger out this week and finally get a box for my STC-1000 then maybee this one will end up in the fermenting fridge :oops:
