I used some brown malt for the first time in a brew last night. It smelt fantastic in the mash. The kitchen smelt more like a bakery than a brewery. I guess the beer I brewed is a type of brown ale, it should turn out sweet and malty with low bitterness and hoppyness. Looking forward to tasting this one.

80% MO
15% Brown Malt
5% Crystal
Fuggles hops for 60mins

This brew got me thinking as I read somewhere once that all British beers where made with brown malt before pale malt appeared. Does anyone know a simple, traditional pre-pale malt era British recipe based on brown malt?

You've basically made a brown porter there, mate.

Beers of yesteryear (I'm talking centuries here) would have tasted very different from the beers we enjoy today.

I have a book that is extremely well detailed and researched on the history of stouts & porters and of course brown malt (it even tell you how to make brown malt yourself).
