Cider

Am going to try my first cider soon! Question are cooking apple’s ok. And do I need to cut any bruises out.
Any advice much appreciated

I am sure I have read you can mix them with eaters but I am not sure of the ratio, we have a few members who make "proper" cider so I am sure you will get an answer.
