LDK is litre degrees per kilogram. This is the number of litres it takes to dilute the extract from one kilogram of malt to a gravity of 1.001.

I think that's the same as saying it's the number of points that one kilogram in one litre would give.

So, on that basis, 100g of DME in 1 litre would be 1.0375.

The same book gives sucrose as LDK 385 and dextrose monohydrate as 320. So sucrose has more sugar than DME. The dextrose has less because every dextrose molecule has a molecule of water linked to it.
