hi there

was hoping for some help with a recipe. wanted to do a beer in the style of 90min. that is, a stronger hoppy beer. cant get simcoe, so im using the hop profile frm goose island as i really like it

what do ppl think?

looks good :thumb: , don't forget the dry hopping, use Centennial and Cascade, and don't be shy with the amounts

you might get an attenuation of around 80% with WLP007, which is good for this style. also you will need a big starter.

never done it- couple of ?s i spose- will that ibu work wit that strength? and do the hops looks like theyre balanced wit each other?
 
you'll be fine your BU:GU ratio is 1.35, the last IIPA I did was 1.65, and the Dogfish Head recipe I have planned is 1.16.

I do find with these beers that they are best drunk young to get all that hop flavour, they are still good when kept but the bitterness then comes more to the fore.
 
thx guys- any advice for dry hopping? Does that just effect the nose of the beer? when i put drop hopping into my recipe software, it doesnt change the ibu

you can dry hop with 3-5g/L for this beer; you can split that into 2 batches, do the first for 3-5 days then fish out the bag and then do the 2nd fo 3-5 days. put them in a muslin bag or bags weighted down with ss cutlery or beer mugs works well. Dry hopping gives fresh hop flavours and doesn't add any bitterness or IBU, it is essential for IIPA's.
 
for an IIPA you want yo use WLP001 (US-05) or WLP007, both will give you an attenuation in the early 80's the 007 a bit more flavour than 001; some breweries use WLP002 or similar, this will give a lower attenuation and leave some residual sweetnes.

So WLP007 is good and is similar to what Dogfish use for their 90 minute I believe
 
just to confirm about the dry hoping amounts- I could dry hop with 30g cascade and 30 g centennial (that's 60g which is roughly 3 g/l). add the hops together, split the batch in two and dryhop twice as directed? but 30g each- is that correct?
