Just about to rack my pomegranate wow and thought I may try one pet bottle of the wine carbonated.
What would be the best way to go about this with the use of campden tabs and potassium sorbate.
I want the wine to stay quite dry and will not be sweetening.

If it's just 1 PET bottle you're trying, then allow it to clear, siphon into the PET and prime, then sorbate the remainder. Make sure not to sorbate the stuff you're trying to fizz up, as the sorbate will kill the yeast and it won't ferment to carbonate.
