I am slowly getting parts to build a herms control box and not sure what fuse to use to protect the PID. I am probably going to use a panel mount fuse holder like these http://radionics.rs-online.com/web/c/fu ... -type=List, so just need to find a suitable fuse.

Use a 'quick blow' fuse, maplins amongst others sell them :thumb:

Up to you really, I use 'quick blow fuses' as standard on my brew gear, they should go before any damage is done to the items in question. I tend to use fuses rated just below the rated 'blowing' value, ie, 13A rating...12A fuse etc or less, whatever your happy with.
