Decided to make the ESB recipe from his book today. The only difference is I have swapped the yeast for S-04 as per his yeast chart. Hit the numbers but had to top up to 23l so added a bit of dextrose to readjust.

I can recommend the Danstar ESB yeast if you have time to get down to the LHBS ... it is fairly similar to the Fuller's strain, at least in taste if not in sedimentation.
 
let me know what you think when its ready, i did mine a while ago,, but it has a toffee apple taste to it. so i did something wrong
 
Think I need to be more experimental with yeasts. Always seem to fall back on the same ones.
 
Got this recipe planned to do Friday, using ringwood yeast looking forward to it.
