How Much Whaet Malt?

Hi I am planning AG#2

Basically I want to brew a Northern version Fullers ESB ie with Wheat Malt to give it a head. I no it is a contentious issue and some of you will be a little :wha: and some of you may think :nono: .

Anyway the grain bill will be

Pale Malt 91.1%
Crystal Malt 8.9%

But how much wheat malt should I add to give it some head?
