So I am onto my 6th brew now, my first was a Festival Razorback IPA Kit, since then I have made a few American style IPAs of varying strengths, and flavours and a Belgian style saison, all from extract.

I love my IPAs but I'm getting a bit bored of them, and I'm in need of some inspiration as to what to brew next. I want to try some more unusual flavour additions, but not sure what avenue to go down. I've been thinking about using fennel seed in a future brew, but not sure what style to use it in. I would also like to make something like Innis & Gunns rum finish, and have been thinking about using some rum soaked oak chips.

Any suggestions for what to brew next?
 
st peter ruby red kits are good just sampled me mates ones highly hopped with American hops
