Congrats on your first brew mate, i started out with a coopers kit too, as a rule i generally use 1/2 a teaspoon of sugar if i'm bottle priming a bitter or stout and 1 teaspoon of sugar if its a lager for extra fizz.

Best of luck progressing to AG, i recently started AG brewing and although its a bit of extra work the results you'll get are fantastic, once you start you'll never look back.
 
I saw a few builds via YouTube including the one you mentioned and decided to go with the one above. One thing you do not see is the stainless steel "safety wire" that was coiled and inserted into the braided tube so the grains do not flatten the tube itself.
