Muntons Connoisseur's Bock + Honey - think it will work?

While I was in Bruges a couple of years ago, I tried a beer called Barbar Bock, which was very enjoyable. I wondered if it would be possible to make something similar by making an MCB kit with honey and maybe brewing a bit short. Has anybody tried modifying a Bock in this way? Do you think it would work? If so, which sugar would you recommend to compliment the honey?
