what sort of plug/socket could i purchase to put on a project box to enable me to connect and disconnect one of these clicky - one from RS would be great, unless they're overproced of course

cool - if I have only two wires from the sensor, does it matter that there may be three on the plug I use - I assume I just won't connect one of them up?
 
no, that wont matter. Just connect two pins only (I ended up using 4-pin ones just because they were in stock).

All I would say is to make sure you use the correct pins. Its all to easy to get muddled when soldering them up back-to-front!
 
XLR was a good choice, or you could also have used Speakon (think that's what they're called) if you want a robust non-metallic connector. I'm told you can even run mains through the latter, but I don't know if that falls into the same category as "twist and tape" joints on mains flex!
