I have made marrow rum in the past so I should have some details somewhere. That involved scooping out the centre of the marrow and packing with dark sugar - no water used - but some lemon juice and something else sprinkled on top. It actually makes a kind of liqueur which is very sweet - you only want tiny amounts. You could add spices too though.

Try checking out the Aussie and NZ brew shops. It's legal to distill here and a good shop should be able to help you out.
