    Done this kit a few times in both 5 & 30 bottle volumes.The instructions suggest racking quite early,but my best results have come from leaving on the oak chips for 10-14 days.Drinks nicely young,but improves if laid down for a year.Not a cheap kit (in terms of home brew) but the quality of the finished wine is streets ahead of all of the lower priced kits I've tried.

    Someone turned up tonight with a bottle of 2011 Wolf Blas yellow label Cabernet.They were supping that until I got this out.The Selection kit blew it out of the water.No contest.
