Found a recipe for a smoked beer with juniper. Now this recipe is quite old (ie hundreds of years) and it calls for 100% of grain to be smoked. Which it would have been cos of the kilning method. But surely with modern smoked malt this would be undrinkable?

Not necessarily if you use Weyermann's. It's barely smoked by Bamberg standards. :D
