Stc1000 keezer wiring question.

After loads of reading regarding wiring up up keezer with a stc1000 temp controller I have a couple of question either I missed or....

1. Can I hard wire the main freezer power cable direct to the stc or is it better keep the plug on it and make a socket out of the stc?

2. What happens to the current temp controller on the freezer? Do I disconnect it? Leave it as is?

I run it through a socket and forget about the freezer stat because even set to minimum it is way too low to worry about.
 
It turns out I needed to keep my original thermostat wired in as unclipped the stc reports a error!
Ran the system for a few hours tonight all is well. Thanks for the replies.

If you disconnect the freezer's internal thermostat without bridging it the freezer wont start. The STC 1000 only reads ERROR if there is a fault with its own sensor
