Taking beer sample from king keg?

Today is 4 weeks since I put on a Woodfordes Admirals Reserve beer kit. 2 weeks in fermenter then transferred to King Keg for another 2 weeks. I'm going to do 2+2+2 method. I read that this is only a guide, but figured its a good starting point.

What temperature is advised for the next 2 weeks?
Do I need to carry on using the temp controller or just allow the fridge to work on it's own?
Also, would drawing off a sample cause any mold or nasties to grow in the tap, or any other reason this is a bad idea?

Although it tasted a bit green when I tried it as I transferred to the pressure barrel it tasted promising and I'm eager to see if it's still on track.
