Hi everyone, should you keep homemade wine/hooch at room temperature or higher?

depends on the yeast you used, it should indicate the optimum fermentation temps on the pack.

a stable temp is a lot better than a varying one, and generally speaking with beers a temperature at the cooler end of the range for the yeast will generally produce a cleaner flavour, when warm the yeast can become very active and produce more complex flavours.
