Wow - they all look like great recipes, i`ve only done a basic hefe (simular to your last recipe on your blog) and a hefe with some munich and vienna, I used wlp380 and both were great, the second didn`t quite have the banana/clove hit of the first one though. I`m really liking the sound of the amarillo and nelson hopped ones and wondering how this would work with the yeast flavour?

As always great looking brews that really make me wish I could brew everyday - truely inspiring :clap:

The all look good ade.

After doing a fair few weizen biers I would definitely recommend going easy on the caramel malts. 10% in the nelson one should be fine but I wouldn't go any higher. :thumb:
 
I'd be very interested in the Ammarillo and Nelson brews, German/American & Kiwi American wheat Beers

"Ammarillo Ausfahrt" and "Nein Nelson Nein this is not Steinlager" :D
