So,.. Looking towards Christmas, I might be away for a week. Should I start fermentations, or wait, until i get home? I use a water bath for temp control.

Yeah, maybe even set the temp a tad lower too. My reasoning is that I clean the bucket between brews. But if I had a break I would need to give it another clean before starting the next one.
I'm basing this on kits, so your mileage may vary.
