Had a can of Crossing the Rubicon this evening whilst reading my brothers short horror story.

It's started off a bit meh, but got better as I got into it.

The story was alright too....
 
Oh crud. This is going to get complex now...

As some will know, I've recently been seeking help of the illuminati to get a better bitter recipe and method; having self-diagnosed my first couple of expeditions into full-grain territory (the Timmy Taylor Landlord recipe from the CAMRA book) as 'drinkable, but a but lacking in body and character'.

So...

I've just been down the local for the first time since it re-opened, and they happened to have the 'proper' Timmy Taylor Landlord on. Brilliant! Time for a chance to taste what it should really be like.

OK on the first sip I was saying to myself - "OK yes, actually I'm not displeased: my homebrew version isn't a million miles away from this..."
Then I had proper mouthful and tasted it properly. Then I was saying "Oh... Ah... fair enough, the mouthfeel of this is a ton better, it just feels thicker and there are flavour notes that mine just doesn't have."

But...

After having enjoyed the first pint, I thought I'd have another. But I really couldn't bring myself to finish it. What on the first pint had seemed like a mouth-filling softness now felt like I was trying to dink liquid gelatine. Worse, on the way home those 'extra' flavours not present in my own version started to taste a bit like I'd been sucking on an old firework rocket... suddenly (no kidding) I was thinking that what I'd previously labelled about my home brewed version as 'thin' and 'lacking in character' was now something was craving as 'clean' and 'refreshing'

Aaaaargh! What's happening!! Is this just a sign of badly-kept pub ale, or is that elusive pub pint better in the imagination than in the glass...
 
Sipping on an oud bruin, but considering I used Brett and not lactobacillus I am not sure it hits that style. It has a wonderful fruity sour, caramel and Candi sugar aroma but the flavor is much more cherry and dark fruit and medicinal and fades to earthy and alcohol. It's malty and complex. This is one of those that needs a few more months in the bottle.

Next tonight, a pint of Cardamom Saison!

Could do with a little more carbonation and isn’t quite crystal clear yet. The flavour is developing nicely but I know it will settle and mellow a little more given a bit more time. I am however happy to drink this now. I should have noted it’s 5.5%.

I was looking at brewing this. I just picked up the cardamom and dried coriander today. I am going to use be-134 yeast.
 
Doing a head to head. I think I prefer the staropramen has a very nice malt support with good bitterness and a nice noble hop flavor. Urquell smells a lot like corn on the cob??? Never have gotten this before from them?

I have a bottle put aside for you to try. Just waiting on another beer or two to be packaged in the next few days and will get them off to you next week. If you can’t wait to get started I think you’ll be happy with it but it needs a month or so for the flavours to mellow.

Please take note that I’m brewing a beer based on a recipe from @Keats , this is really his beer and if you like it, he deserves the credit. Of course, if you think it’s awful, that’s his fault too! 😂
 
Just retired to hotel room after a gruelling Day 1 of a 2 day strategy meeting to find this unexpected gift which I have half an hour to see off ahead of the evening activities....

I’ve been on many of those events, is this the networking “gala” dinner? The ones I’ve been on have all actually been quite good. You’re gonna get wrecked on free wine!! 😂

PS. Good luck getting up for tomorrow’s keynote!
 
Sneaky taste of the just carbed Dry Stout (brew #6) brewed end of July before hiding the bottles away for a bit. Really pleased with this. Lovely roasted notes but no hardness. Quite classic style. Might crack a bottle of Guinness Original later for comparative purposes. Onwards and upwards.
