Have you tried different yeasts?
I have always made TC with wine yeast and have always thought that it tasted a bit insipid nothing great. Then I was given six bottles of descent cider one of which was a Westons cloudy, so I cultured the dregs and got viable yeast. Now I have just made a TC with apple juice (with some grape tannin for bite) and this Weston's yeast. The TC certainly has that farmyard cider twang that you get with a good ciders.
