when to sweeten

Hi, having racked a 5 gallon red wine kit this morning and added stabilisers. I am de-gassing it all day today and the finings need to be added tomorrow. It got an FG of 0.995 and is very dry. Too dry for me. (when it had a reading of 1.005 it was just nice for me) So I want to sweeten it.

How much sugar do I sweeten it with and how do I do it?
Also at what stage do I sweeten it?

1 oz sugar per gall will raise the sg by nearly 2.5 points.
You are looking to raise it by 10 points, so will need to add about 4 oz per gall.
Make sure your yeast is no longer active, else it will start fermenting again.
 
Hi Suzie, you can sweeten at any time after racking and stabilising.

To bring one gallon back up by 10 points you need 4.25oz, 120g of sugar, so that's 600g for your 5 gallons.

Boil that in a small saucepan with around 300ml water, then put the lid on and allow to cool.
