Asking out of curiosity, as not in any rush, but...
I've just completed a couple of Winexpert kits, a Classic (4 week with 8l of juice concentate) Riesling, and a Reserve (6 week with 10l) Traminer Riesling.
Both have exactly the same steps up to the 2 week stage where they are racked into a carboy, and from there on the only difference is the time to clear in the carboy (2 or 4 weeks).
There is no addition of oak or anything apart from the reserve (back sweetening juice) packs which are added when racking.
I completed the classic one first, bottled about a month ago, and the bottles are lovely and clear with no sediment.
For kits with skins or oak cubes I can see the logic, but I'm left wondering if it's just a marketing thing that all the more expensive kit needs another 2 weeks in the carboy. Presumably if the expensive one benefits from 2 more weeks cleaning, then so would the cheaper?
