I've made my first WOW from the basic recipe ie 1l orange juice and 1l WGJ. I've racked it after fermentation had finished and I've added a campden tablet, wine stabiliser and finings. Overnight there is about 5mm of sediment in the bottom of the DJ. Should I rack this again or leave to age a bit longer as it is? If I'm leaving it should it be under airlock or a solid bung?
