Just a little taste of my Vintage Ale in the blazing sun - unexpected treat according to the forecast!

The beer is still young but the flavours are starting to come together at 6 weeks conditioned. I expected this to need three months conditioning and I think that’s probably about right. At the moment it’s still a little alcoholic and the malt is a bit hidden as a result.

Cracked open the second bottle of Tin Miner's Ale (GH recipe) last night.

Really nice, complex taste. I got orange, chocolate and malt on the palate. Kind of reminded me of a badger beer. Of 50 AG brews, I've never brewed anything like it before.
 
First sample of my 12.2% quad today, well it is Wednesday after all

Amazing colour considering I only used Pilsner, extra pale and homemade candi syrup. I got an immediate hit of breadcrusts whilst I was pouring followed by a rich dark fruit fig aroma. Lots of the same in the flavour, very complex and boozy, low bitterness and quite sweet, but not cloying, it actually finishes fairly dry with a slight velvet chocolate lingering on the tongue. Nice medium carbonation and a small creamy white head that fades to a thin rim and then disappears. It's still fairly young, I bottled this on the 31st of January. I feel it could use a few more months to mellow out the alcohol, but it's pretty damn good either way.

Did you follow the recipe to the letter? I really enjoyed that one, I must do it again!
 
I start with RO water and just add Calcium Sulphate (0.15g/l) and Calcium Chloride (0.05g/l).

SO4:84, Cl:24, Ca:48

I'm just drinking my lager/pils and although its soft enough I'm wondering if a touch more sulphate would improve the crispness 🤔

Wilko classic lager artisan range, not bad for a cheap one. Comes with 10g of hops. If I did it again I'd probably double up on the dry hop. Sorry about the background but if you've seen any of my other posts you'll know I've been blackmailed. Where's my brewzilla???
